I preparing a 13 lb. beef roast

I preparing a 13 lb. beef roast using a charcoal weber kettle grill for a charity beef cook off contest. I have my rub all set. I have chosen the indirect cooking method. How do I keep the roast moist and not have it dry out? The allotted cooking time is 3 hours.
