Il Bistro Italiano focuses on Italian cuisine with particular emphasis in Northern Italian cuisine. The menu changes with every season and several times within season. From the very beginning, there has been a conscious focus on using as many local ingredients as possible. We work with local farmers and ranchers for produce and meats, but we also use other Colorado foods as much as possible.
