The story of The Butcher Shop Beer Garden & Grill began with the purchase of an old-fashioned butcher shop in West Palm Beach, FL, named Charlie's, known for its timeless recipes and commitment to quality meats. Igor Niznik, then a recent transplant to South Florida from New York and of Eastern European descent, quickly took to the creative challenges and demands of operating the shop, infusing his own flavor into the gourmet market, while his eldest son, Fred, was still living in New York, working in the restaurant industry and frequenting beer gardens.
