In pre-Columbian times the Tarascan's and the Aztecas in Central México created this sauce with ground roasted pumpkin seeds, purple corn meal and dry chiles to accompany their fish and wild game.
- CHICHARRÓN EN SALSA
Select pork belly fried and roasted until crisp. Served with a combination of two sauces, green tomatillo, red tomato, scallions, and fresh-pressed garlic.
