• Amok (Cambodian Fish Curry): The national dish of Cambodia. Chef Channy Laux prepares it with a from-scratch kroeung (a fragrant paste made of lemongrass, galangal, kaffir lime rind, turmeric, and garlic). The spiced catfish mixture is marinated in coconut cream and eggs, then steamed to a delicate, soufflé-like texture inside a fresh banana leaf bowl. Guy loved its light, fresh flavor, calling it a "Cambodian catfish soufflé".

• Angkor Noodles: A deeply comforting, rich noodle dish that Guy compared to having a "Cambodian enchilada sauce" due to its slow-simmered base of California chili paste, coconut cream, and shallots. It features premium chunks of savory pork belly marinated overnight.
