Papi Queso Brings Gourmet Grilled Cheese to the Streets
The popular food truck Papi Queso was recently featured on the hit show Diners, Drive-Ins and Dives hosted by celebrity chef Guy Fieri. Based in Charleston, South Carolina, Papi Queso serves up gourmet grilled cheese sandwiches and other cheesy delicacies from the back of a vibrant orange and blue truck.
Owners Colin Blagrove and Jessica Annis first met while working at a restaurant in Charleston. Bonding over their shared love of grilled cheese, they decided to launch Papi Queso in 2017 to bring their creative grilled cheese visions to life.
Fieri was impressed with Papi Queso's melty, ooey-gooey creations like the "Squash Blossom" sandwich featuring a fried zucchini blossom stuffed with homemade pimento cheese. The "Chuck Norris" sandwich piles braised short rib, pickled jalapeños, caramelized onions, and pepper jack cheese between slices of griddled bread.
Papi Queso sources many ingredients locally in Charleston, like the sharp pimento cheese spread made specially for them by a nearby cheese shop. They also offer a wide array of dipping sauces to complement the sandwiches.
The bold flavors and gooey cheeses of Papi Queso have earned the food truck a loyal following. Being featured on Diners, Drive-Ins and Dives has introduced their crave-worthy grilled cheese sandwiches to a national audience.
