Opened in Fall of 2022, Olympia “Opie” Carter at age of 25 opened Opie’s Bar & Grill. They hand make most everything from her tantalizing Mac & Cheese Bites appetizer that are the size of your fist to the Battered Tenderloin sandwiches that are hand pounded. Yes, I was there when they were hand pounding them! I was super impressed with Opie, who works her tail off, as both server and bartender and cook, who is now only 29 years old! She personally is worth coming to Galesburg Illinois ! Please consider visiting Galesburg Illinois, railroad capital of the US! :). Thank you!
