Please check out Pop Tacos in Baltimore, Maryland (more specifically- Federal Hill, Cross Street Market). Their tacos are AMAZING!! Their set up is like Chipotle or Qdoba. You pick all of your toppings. They have amazing cilantro noodle soup as well (only during the winter). You must try the spicy sweet pork! It's like a Korean taco. What makes them unique is their sweet rice.
