Guy, This might be an unusual request...but perhaps with resources that are available to you, that you might be able to find or re-create an old recipe. I grew up near Colbert Oklahoma. There was an old BBQ place called Po' Sam's. Meat is meat...but what separates the good from the great is the sauce! Well...at least in my opinion!! He didn't have a sauce. It was more like a thick, brown gravy that was slathered on top of the pulled pork sandwiches. I have no idea what the recipe consisted of, but I do recall that once the gravy cooled down, it congealed so I'm sure it had some type of meat fat or lard in it. I recall seeing red and black flakes in it so I'm sure it was black pepper and probably paprika. Pretty sure that he took the recipe to the grave with him, because I've never seen or tasted it since. If your ever in the Denison Texas area, find Randy's BBQ for the bestest 'heartburn' to be found! Magnificent spicy sausage stuffed jalapeno peppers, dipped in a batter and then fried. AWESOME compliment to a BBQ sandwich!
