Hello Chef Fieri, Please come visit my restaurant here in Victoria BC Canada, I came to Canada in 2006 from A Tibetan refugee family from North east Himilayan region of India famous for Darjeeling tea. As any new immigrant I wanted to share my mothers recipies with the people of Victoria. So I built my first kitchen in a 8X10 hole in the wall and Tibetan Kitchen was born. local magazines and Times Colonist wrote articles about my food and soon I started getting line ups, so In 2008 when many restaurants were closing down because of the resscession I opened a sit down Tibetan Kitchen in the heart of downtown Victoria. Now me and my daughter cook out hearts out supporting local farmers and cooking a small very focused menu, Because I am born in India we offer Gluten and dairy free curries, we replace all dairy with cashew paste which we make from scratch, our Tibetan potstickers are hand rolled , old school all lean meat and NO MSG in our food, so our food is so different from any Asian restaurant. We have had an episode with Canadian food network " You Gotta Eat Here " where I cooked Salmon curry. I would like to show you how we make our potstickers and our quinoa stir fry with fresh vegetables, local free range chicken curry completely gluten and dairy free so rich and beautiful. I promise you will be surprised that there is no dairy in our curries. Ours is the only Tibetan restaurant in the whole state of BC and we are doing very well. no culinary background just what my mother taught me. and the love of good local food.
