The Dish Room-Burlington, Colorado The Dish Room in the best restaurant between Denver, CO & Hays, KS. People are changing their travel routes & plans just to be able to stop & eat here. The menu changes seasonally. There are unique twists on classics like the poppers. They aren't your ordinary jalapeño poppers you dip in ranch. These are big Anaheim peppers stuffed with 3 cheeses, wrapped in bacon and topped with ranch & their OG sauce (chipotle honey sauce). There are unique items like the butternut squash enchiladas & sweet corn tamale that you won't find just anywhere. It's fine dining in a casual atmosphere. It's been described as a diamond in the rough. You don't expect this quality of food in a small town like Burlington, but it's here. Chef Ezra Gutierrez is constantly pushing himself to refine his craft & try new methods by endless research & development of recipes & new dishes.
